How to Make Cincinnati Skyline Chili

Good news is, this recipe is super simple to make and uses ingredients you probably already have on hand!

  • Start by browning ground beef in a large pot or Dutch oven.

  • Add onions and garlic, sauteing until onions are translucent.

  • Throw in your spices, tomato sauce, tomato paste and water or broth. Simmer for an hour to let the chili thicken.

  • Voila! Cincinnati Skyline Chili!

  • Serve it over spaghetti and top it with onions and cheddar.

Ingredients

2 lbs. lean ground beef
2 onions, finely diced
5 cloves garlic, minced
1 tbsp + 1½ tsp chili powder
1 tbsp cumin
½ tsp chili flakes
½ tsp cinnamon
1 tsp cocoa powder
1 15 oz. can tomato sauce
1 tbsp tomato paste
Salt + pepper, to taste
1 cup water or chicken broth
1 lb. dry spaghetti
Shredded cheddar cheese, for topping

Method

In a large pot or Dutch oven, brown ground beef over medium-high heat for 8-10 minutes, breaking up the beef into fine crumbles as it cooks. Add most of the finely diced onions (save a few tablespoons for topping at the end) and minced garlic; cook until onions are translucent, 3-5 minutes.

Add spices and cocoa powder and saute for 1-2 minutes, or until spices are fragrant. Add tomato sauce, tomato paste, water or chicken broth. Simmer on low for about an hour, or until the chili begins to thicken. Add more water along the way, if needed. Season chili with salt and pepper, to taste.

Once the chili is nearly done, bring a large pot of salted water to a rolling boil. Cook spaghetti according to package directions. Drain pasta and return to pot, tossing with a drizzle of olive oil to prevent the noodles from sticking.

Add a ladle or two of the chili to the cooked spaghetti and toss to combine. To serve, portion out spaghetti and top with chili, onions, and shredded cheddar cheese.
