I used to dread making baked potatoes. Putting them in the microwave seemed like cheating, but baking them in the oven took so long! Not anymore. I’ve got the secret to amazing baked potatoes that are fluffy on the inside and crispy on the outside - and it’s quick!
Ok…the secret is…STEAMING! By slightly steaming the potatoes before they go in the oven, you’re retaining moisture and ensuring even cooking, which means no more dry potatoes. Huzzah!
Perfectly Crispy on the Outside, Fluffy on the Inside Baked Potatoes
Makes 6 baked potatoes
Prep time: 5 minutes
Cook time: 30 minutes
6 Russet potatoes, washed
1. Preheat oven to 400ºF. Add 1/2 to 1 cup of water to a pot. Insert steamer basket into the pot and place washed potatoes into steamer basket. Steam potatoes until they can be easily pierced with a fork, about 10-12 minutes for a smaller Russet potato.
2. Remove potatoes from steam and transfer to a line baking sheet. Drizzle potatoes with olive oil and sea salt, evenly coating all sides. Baked potatoes until the outsides turn crispy and bowl, about 15 minutes.
3. Let potatoes cool slightly, serve with a pad of butter and freshly ground black pepper.
