Here’s the thing, I don’t participate in or subscribe to, Valentine’s Day. No, I’m not a Grinch; I like chocolate and flowers and sweet notes from my husband…on any day other than February 14th.
That being said, I do participate in and subscribe to brownies - gladly! - on or around the 14th day of the second month of the year. I mean, a girl and her husband still gotta eat, right?! And why not deliciously dark, chocolatey brownies?
Dark Chocolate Cherry Brownies
Makes one 8x8 pan of brownies
Prep time: 10 minutes
Cook time: 25 minutes
1/2 cup butter, melted
1/2 cup sugar
1 teaspoon vanilla
1/3 cup unsweetened cocoa powder
1/2 cup flour
1/4 teaspoon salt
1/4 teaspoon baking powder
3/4 cup dark chocolate chips or chopped dark chocolate bar
3/4 cup frozen sweet cherries, thawed, drained and chopped, plus 1/4 halved cherries for topping
1/2 cup chopped walnuts
1. Preheat your oven to 350ºF. Beat melted butter (slightly cooled), sugar, eggs and vanilla together until combined. Slowly add in flour, cocoa powder, salt and baking powder, mixing until all dry ingredients are incorporated. Fold in chocolate chips, cherries and walnuts.
2. Pour brownie batter into a greased 8x8 baking dish, topping with additional halved cherries. Bake at 350ºF for about 25 minutes, or until a knife or cake tester inserted into the middle of the brownies comes out clean. Let brownies cool slightly before slicing.
