For all those lobster roll purists out there…I’m sorry in advance! But this open-faced, curried version is the only kind of lobster “roll” I want in life.
Curried Lobster “Rolls”
Makes 2 servings
Prep time: 10 minutes
1/2 lb. cooked lobster meat
2 tbsp mayonnaise or Greek yogurt
1 tsp curry powder
1 stalk celery, finely diced
Salt & freshly ground black pepper
Fresh cilantro, minced (optional)
2 slices sourdough bread
1. In a bowl, combine lobster meat, mayo or Greek yogurt, curry powder and celery; toss to coat. Season with salt, pepper and cilantro, to taste. Top sourdough sliced with lobster mixture and enjoy!
