Cucumber Salad with Mint & Whipped Feta

What’s your favorite summer side? Mine is anything with cucumbers. Add feta and I’m sold!

I love the combination of sweet, cooling English cucumbers, mint, and salty, briny feta in this salad. What’s better? This baby can be whipped up (literally) in less than 10 minutes, which makes it the perfect side for a weeknight meal. Orrrr a fresh addition to any summer BBQ; the crunchy cucumbers and acidity in this salad balance fattier meats such as steaks, burgers and ribs like a dream! Top it with a handful of salad sprinkles for extra texture and a nutty finish.

Cucumber Salad with Mint & Whipped Feta

Makes 4 servings
Prep time: 10 minutes

Ingredients

6 oz. feta cheese
Zest of 1 lemon
Juice of 1/2 lemon (save other half for topping)
2 English cucumbers, washed and cut into 2-1/2-inch spears
2 large sprigs mint, roughly chopped
Salt & pepper, for topping
Olive oil, for topping
Salad Sprinkles, for topping

Directions

1. In a food processor, combine feta, lemon zest, juice and few grinds of black pepper. Puree on high until feta is reaches a whipped, creamy texture, about 2 minutes. Don’t forget to scrape down the sides, as needed! If you notice the whipped feta is still a little too thick, add a teaspoon or two of plain Greek yogurt to help loosen it up.

2. Meanwhile, prepare your cucumbers. Thoroughly rinse two English cucumbers and cut 2-1/2-inch long spears, lengthwise.

3. Spread a generous layer of the whipped feta onto the bottom of a serving platter. (There will be some leftover feta, but don’t worry, it' goes great on sourdough toast for breakfast or with veggie for dipping.) Next, even layer cucumbers across whipped feta, top with mint, salt, pepper, a drizzle of oil and a handful of Salad Sprinkles. Enjoy!
