Chili Chocolate Almond Cookies

Makes about 2 dozen cookies
Prep time: 10 minutes
Cook time: 10-12 minutes

2/3 cup unsweetened cocoa powder
2/3 cup all-purpose flour
1 tsp flaky sea salt
2/3 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon chili powder
1-1/2 to 2 cups semi-sweet chocolate chips
1/4 to 1/2 cup chopped almonds

Preheat your oven to 375 degree Fahrenheit. 

In a medium bowl, sift together cocoa powder, flour and salt. Set aside. 

In a large bowl, cream butter and sugar with a whisk or hand mixer until smooth. Beat in egg, vanilla, cinnamon and chili powder. With a wooden spoon, gradually stir in cocoa and flour. Fold in chocolate chips and almonds. Drop generous tablespoons (or a small ice cream scoop!) of dough onto parchment-lined baking sheet. 

Bake cookies for 8 to 10 minutes. Let cool briefly on the baking sheet until transferring to a cooling rack.
