What is a hotdish?

A hotdish is just another name for a casserole, really. Hotdish is typically a beautiful compilation of meat, starch (commonly tater tots in Minnesota. See Molly Yeh’s inspirational tater tot hotdish artwork here), veggies and canned creamy soup. Or in this case, Greek yogurt.

Healthy-ish Chicken & Broccoli Hotdish

As a Midwesterner, I’m a sucker for a casserole - er, hotdish? They really hit the spot - and there are infinite flavor combinations. Truly, a casserole never gets boring. Plus they’re super easy and take very little time to prepare.

This chicken and broccoli hotdish is a healthier spin on a recipe my dad use to make - chicken baked in cream of mushroom and chicken soup and served over white rice. That s**t was delicious.

Healthy Chicken & Broccoli Hotdish

Makes 6 servings
Prep time: 10 minutes
Cook time: 20 to 25 minutes


2 heads broccoli, florets removed and roughly chopped, stems discarded (or saved for another recipe)
1 lb. chicken breast, cooked and diced
1 1/2 cups quinoa, cooked
1 cup nonfat Greek yogurt
2 tbsp dijon mustard
1 tsp garlic powder
2 tsp curry powder
1 cup shredded cheddar cheese, plus more for topping
Salt and pepper, to taste


1. Preheat oven to 350ºF. Meanwhile, bring a large pot of water to a rolling boil. Boil broccoli florets for two minutes; remove from water and transfer to a large bowl.

2. Add cooked chicken, quinoa, Greek yogurt, mustard, garlic powder, curry powder and shredded cheese to the bowl of broccoli; stir to combine. Season with salt and pepper to taste.

3. Transfer chicken and broccoli mixture to a large greased casserole dish. Top with a few sprinkles of cheese. Bake in the oven until cheese is browned and bubbly, 20 to 25 minutes. Enjoy!
